I'm on a roll with this half-scratch business! I'm really loving the convenience of using the foods I find in grocery stores and whipping up something new with those items. In this case, I was looking for a quick thing to bring to work for lunch and this took about 5 minutes to make start to finish. Of course, you can choose to use russets instead if you have a bit more time.
1 cup Idahoan mashed potatoes
1 cup water
1/2 cup soy milk
1/2 tbsp Earth Balance
1 envelope savory herb gravy
up to an additional 1/2 cup of water
1: Bring water and soy milk to a boil
2: Add mashed potatoes and Earth Balance and stir for about a minute until potatoes are fluffy
3: Add gravy mix, stirring and adding in additional water a little at a time until the potatoes are at the preferred consistency
Makes: 2-3 servings
