Vodka Goulash


I made this tonight partially to appease my housemates but mostly for my pasta cheat day... and it was completely worth every bite.  But get ready to fall into a pasta coma or at least try this one on a weekend day, so you have some time to recover from the carb overload!

1 package pasta of your choice (I used Garofalo Organic Casarecce)
2 cans diced italian tomatoes (garlic, oregano, basil)
1 cup frozen peas (thawed)
1 can white beans
1 can tomato sauce
1/2 cup vodka
1/2 diced onion
2 tsp garlic
2 tbsp fajita seasoning

1: Cook pasta according to instruction, strain and set aside
2: Saute onions, garlic and diced tomatoes with the fajita seasoning and vodka until onions are soft
 3: Add thawed peas and white beans and simmer, covered on low for 10-15 minutes
4: Turn off heat and leave to set for 15 minutes to allow the flavors to fuse

Makes: 6 hearty servings
