Avocado Toast


Enjoying my afternoon tea and what would be the perfect compliment to this drink, but toast, of course! Perhaps some jam will do for yours, but I prefer something a bit heartier.  Supplied by my local farmer's market, I prepared this toast with a bit of olive oil and a splash of balsamic vinaigrette, as well as a roma tomato and a perfectly in season avocado.  So delicious, I think I may have another slice...
ingredients:
2 slices of sourdough bread
1 avocado, sliced
1 roma tomato, sliced
1 tbsp olive oil
1 tsp balsamic vinaigrette
sea salt & cracked pepper
1: Slice each piece of bread in half and toast
2: Mix olive oil and balsamic vinaigrette on a plate and mix together, brushing the combination over each piece of toast
 3: Lay sliced avocado over each piece of toast, then salt and pepper them to your taste
4: Complete your toast with a roma slice on top and serve

Makes: 4 1/2 slices
