Although Quinoa is not a grain, it can be used as such in many recipes. I've made it in place of a rice dish, as a pasta and also mashed up with black beans in a burger. For this recipe, I went with simple ingredients and made a big batch for easy reheating as work lunches. This can also be eaten as a cold salad as well.
1 cup red quinoa
2 cups vegetable broth
10 mini multi-colored peppers (or 1 cup chopped peppers)
salt & pepper
*other seasonings you prefer normally in a rice or risotto dish
1: Bring vegetable broth and quinoa to a boil
2: Saute peppers with a bit of olive oil in a separate pan
3: Add peppers, set burner to low and cover for 20 minutes
4: Turn off burner and allow quinoa to set for another 15-20 minutes
Serves: 4 one-cup servings
