Mashed Potatoes in a Mug

Sometimes a full out home-cooked meal is just not necessary when you're craving warm cozy comfort food.  I make these mashed potatoes in less than ten minutes and save the other portion for lunch the next day.  You can mix it all together and add a bit of fresh garlic to make a gravy-inspired Skordalia too!

5 red potatoes
2 tbsp Earth Balance
1/3 cup soy milk
1 package herb gravy mix
1 cup vegetable broth

1: Clean potatoes, cut into fourths and boil until soft, then drain
2: Mash potatoes, adding Earth Balance and soy milk until preferred consistency
3: Boil vegetable broth and whisk in gravy mix until smooth
4: Turn burner down to low, cover and let simmer until thick, occasionally stirring
5: Add potatoes and gravy to a soup mug and enjoy!

Makes: 2 servings
