If you have a gluten sensitivity or you're staying clear of heavy carbs, this quinoa and cheese is the perfect side dish!
1/2 cup dry quinoa
1 cup water
1/3 Daiya Cheddar wedge
1 tbsp Earth Balance
salt & pepper
1: Add quinoa and water to a medium sized pot and bring to boil
2: Cover and simmer on low for 15 minutes
3: Add Daiya and Earth Balance and stir until melted
4: Leave on stovetop, covered for about 15 minutes to allow quinoa to fluff
Makes: Two servings
