On a weekend away to Whidbey Island, Washington, this yummy salad was made by my Bear's stepmother. Fruity sweet with a hint of mint, I loved it so much that I had to share!
2 cups cooked brown rice, cooled
2 cups cooked quinoa, cooled
1/4 cup dried fruit
1/2 finely chopped red onion
1 finely chopped avocado
2 tbsp chopped mint
balsamic vinegar dressing
Mix all ingredients together, adjusting the balsamic vinegar to suit your taste. That's it!
Serves: 6-8 average portions
