Cinnamon Applesauce Cake

This is my take on a cake my Bear's grandmother makes.  The cake is very moist and can be eaten on its own without frosting as a healthy alternative to more sugary treats.  I, myself, prefer a little sweet on top.

2 cups flour
2 cups brown sugar sugar
1 1/2 cups cinnamon applesauce
1/2 cup Earth Balance, softened
2 egg replacers (3 tbsp ground flaxseed)
2 tsp baking powder
2 tsp ground cinnamon
1 tsp vanilla
1/2 tsp salt

1: Preheat over to 350°F
2: Mix all ingredients together until smooth
3: Grease pan with Earth Balance or cooking spray and fill pan with cake mixture
4: Bake for 35-40 minutes
5: Let cool before frosting, although this cake can be eaten without frosting as well!

Quick Cinnamon Frosting:
1/2 can Duncan Hines vanilla frosting
1/2 cup Earth Balance
1 tsp cinnamon
1 tsp vanilla extract

Makes: One large 9" x 13" cake
