A quick stew that can be made in under ten minutes for a quick dinner with leftovers for lunch the next day.
1 can pinto beans
1 package mixed vegetables
1 tbsp Earth Balance
1/3 cup creamy balsamic vinaigrette
1: Simmer beans, Earth Balance and balsamic vinaigrette on low until beans are softened
2: Steam veggies and add them to the bean mixture, continuing to simmer on low
Makes: 4 medium bowls
