I made this recipe out of pure laziness after spending my whole day off in my pajamas, writing at my desk. The preparation for this recipe is literally less than five minutes! Simply put everything in the crock-pot and go back to what you were doing. :)
1/2 cup yellow split peas
1/2 cup green split peas
1 cup lentils
1 cup precooked drained black beans
4 cups (1 qt) tortilla starter soup base
2 cups vegetable broth
1 tbp powdered garlic
2 tbsp fajita seasoning (or something similar)
salt & cracked pepper to taste
Literally all you have to do it put all of the ingredients in a crock pot, stir and cover. I cooked mine on high for an hour, then stirred it around, as it gets quite fluffy. I then set it to the lowest heat setting and left it cooking for another hour to infuse the flavors. This recipe is extra tasty with tortilla chips (I think it's the salt that kind of balances it out).
Makes: 10 one-cup servings
